December 12th

OH MY GOODNESS. I didn't think being laptopless would be this bad. It really is awful! Obviously I can't search for jobs, I can't read other blogs or leave comments and I can't procrastinate on Facebook. I can only hope my charger gets here soon! I really miss the blogging community, it sounds sad but you guys have genuinely helped me through some tough times and I hope I've been equally kind to you.

Anyway yesterday my mum made some delicious mince pie muffins from my favourite cook book, I was going to make them myself but I was feeling particularly lazy... My mum has done a cracking job of decorating them as well, she is a master icer due to a course she took way back when. Some of my birthday cakes have been cracking!

Anyway here is the book:


The recipe (a lot of ingredients but a simple recipe) Makes 12:
300g of plain flour
1tbsp baking powder
115g caster sugar
1/2 tsp of ground ginger
1/4 tsp of grated nutmeg
175ml of milk
2 tbs of Grand Marnier (very expensive, maybe find a cheaper alternative)
1 egg, beaten
115g of melted butter
Zest of 1 lemon
6 tbs of luxury mincemeat

Preheat over to 200C or gas mask 6 and line your muffin pan

In a large bowl chuck in the flour, sugar, baking powder, ginger and nutmeg and give it a good stir

In a separate bowl mix the milk, Grand Marnier, egg, butter and lemon zest. Then pour it into the dry ingredients and stir until just combined. Half fill each muffin cup with this mixture and then put a heart teaspoon of mincemeat on top of this and push down, then blob the second half of the mixture on top.

Bake for 20 minutes until they look risen and muffin like. My mum did them in thin muffin cases so they look like little mushrooms! Still delicious though. She decorated with icing and marzipan berries and leaves. GAWJUS!

  5. Oh NOM! These look really yummy. I'm not to keen on mince pies (I don't really like the bit on the middle), but I'm sure my boyfriend would appreciate these mince pie muffins! xo
