December 9th

As you will have gathered from my past blog post the other day was Charlotte's birthday and I made her this jar of homemade sweets as a little present. I also bought her a pretty pretty tea set but obviously I can't do a recipe for that... In my jar of sweet treats are the sugar mice I made the other day, peppermint creams and homemade jazzies.

Anyway the jazzies are obviously easy to make, I just melted a couple of bars of Galaxy chocolate in the microwave and the blobbed them out in rough circles and popped coloured sprinkles on the top. I left mine in the fridge overnight to make sure they were all set. I blobbed them onto greaseproof paper and after an hour in the fridge moved them all to make sure they weren't sticking

The recipe (I halved this):

1 egg white
1/2 lemon's worth of juice
1 tsp of peppermint flavouring
425g of icing sugar
175g of dark chocolate if you want to decorate them

Whisk the egg white until it is frothy and forms peaks. Then in a larger bowl sift in the icing sugar and mix together. Add the lemon juice and the peppermint.

Once all mixed together put some of the extra icing sugar on a work surface and turn out the mixture. Roll it out until it is smooth and thing. I had to use a heck of a lot of icing sugar to prevent it sticking to both my rolling pin and kitchen counter top.

Cut out the various shapes, I did hearts and circles and move them onto a tray. Put them in the fridge for a couple of hours to chill. Then you can decorate them by melting the dark chocolate and coving half of them or drizzling it in an artistic style.

Will you be making homemade sweets this Christmas?

Also, I said this on the last post, but I have to say again that I think these sugar mice are adorable x
