Winter Warmers - Leek and Potato Soup


This recipe is one of my favourites, my mum passed it down to me and never fails to warm my tummy on a winter evening.

We ate this last weekend, I baked the bread on the Saturday using Paul Hollywood's cob loaf recipe, which turned out well, it was the first time I'd made bread when not under the supervision of my mumma.

The soup is incredibly easy to make, and I don't really use measurements, I'm more of a 'chuck it in and see what happens' kind of girl, roughly for 2 people you will need:

  • 2 leeks
  • 1 1/2 baking potatoes
  • 1 onion
  • vegtable stock in hot water
  • milk
  • lump of butter
  • splash of olive oil
  • salt & pepper

  1. Heat the butter and the oil in a large pan, bung in the leeks and onions and heat until they're soft (around 5 mins on a low heat)
  2. Slice the potatoes into small chunks and chuck them in after the 5 minutes is up
  3. Heat for a further 5 minutes
  4. Add the vegetable stock and fill until all ingredients are covered
  5. Pour in some milk, a little bit at a time until the soup becomes a light green colour ( I just do this by eye)
  6. Add salt and pepper, bring to boil and then let it simmer for about half an hour
  7. Whizz it up with a hand blender when you feel the time is right

    it's summer over here in new zealand and too hot for soup, but yours looks delish! and good job with the bread- looks lovely!

  6. Bread is the only thing I like baking with my husband. It's just a lot of fun and it's become our thing! Your bread looks absolutely gorgeous! My favorite soup has always been a spicy pumpkin one that I made for years and of course tomato soup. I'm going to have to save this one of a cold day xoxox
