Bec vs Pinterest: Mini Egg Cookies



It has been a while since I've done a Bec vs Pinterest post - no excuses, I just couldn't be bothered. However, this weekend I armed myself with my new electronic whisk and Pyrex bowl and picked the most delicious looking cookie I could find.

As the shops seem to insist it is reasonable to sell Easter chocolate in January (it isn't ok) I picked up the mini eggs crucial for this recipe with ease. I'm always terrible at cookies, with them often spreading to become huge misshapen burnt blobs. However these ones turned out surprisingly well!

One thing that did piss me off was how indestructible the bloody mini eggs were. I spent a while bashing them with various implements and smashing them on the table before admitting defeat and cutting them up with scissors. The recipe calls for one bag, but I had two and still don't think it was quite enough - or perhaps I'm just greedy.

Another top tip is to use an ice cream scoop to measure out the amounts of cookie dough. Usually I just plonk it on and hope for the best, but after the success of measuring cupcake mix in ice cream scoops I thought I'd try it on here - and it worked a treat!

    And I agree, it does not look like there is enough eggs in those cookies...maybe 3 bags?

  3. These look amazing. Although I'm 90% sure I'd eat all of the mini eggs before I got a chance to actually add them to the cookie dough, its a problem.

  4. I need to make these NOW. I agree with Vic though, I'd end up putting most of the eggs in my mouth instead of in the dough so I'd probably have to buy a few extra bags and stuff myself before I started xx

  5. I use to love Morrisons cookies for all the fun stuff they stick into cookies, those mini egg cookies look so fun and tasty!

  6. Could not agree more about the wrongness of Easter eggs in January (ranted a lot about that this month) but hellooooo mini egg cookies, I could get on board with those. I'd say you win this round.

    Mini Eggs are such a hard thing to resist, any time of the year. I love that they bring them out in a different guise at Christmas now too.

  14. I'm so glad to see that other people find Easter stuff in the shops not okay at this time of year too! Almost two weeks ago my husband & I were shocked to see just how quickly the shelves were being stocked with easter eggs, hats, baskets, bunnies and hot cross buns.

  16. Erm, so these look incredible, mini eggs are the greatest. I love pinterest for recipes and in general, it's quite hypnotising though, I've found myself coming out of a trance where I've pinned solidly for around half an hour with no awareness of the world around me x
